The making of MilkMade flavor #106, Dark and Stormy

Step 1:The “Stormy” part of Dark and Stormy comes from the ginger. Of course our is fresh from the Greenmarkets of NYC. And the “Dark” Comes from our rum, which we infused right into the ginger.

We’re gearing up for another week of deliveries! The forecast calls for snow, but our members are calling for more ‘scream. Despite our stormy relationship, we decided to pay tribute to the dark winter weather this month with our first flavor.

It was a dark and stormy night… That iconic phrase has pretty much described every delivery night of the new year, since Old Man Winter has dumped over 4 feet of snowy delight on our city since January. On dark and stormy nights, we often find solace in a cup. Taking inspiration - we’ve turned that cup into a pint. With a name fit for the weather but a taste bright and spicy, here’s the MilkMade version of the “Dark and Stormy”.

Our other flavor of the month is a remix of a timeless candy - the cherry cordial. We decided to recreate it in ice cream form, and here’s how

You know you’re loved when you’re given a box of cherry cordials on Valentine’s Day. But how about a pint of cherry cordial ice cream? True romance. We’ve recreated the classic cordial in ice cream form, with an Amarena cherry ice cream base with chipped Valrhona white chocolate and Mast Brothers dark chocolate. The cherries are naturally sour, the dark chocolate a bit bitter, and the white chocolate is super sweet, making this one intense and complex pint, just like love itself.

Step 6: We pack each pint by hand and layer each layer by hand. One layer caramel, one layer brie ‘scream, another layer caramel, another layer brie ‘scream, and top it all off with another drizzle of caramel.

Step 5: We reduce the wine and add it to our house-made caramel swirl. It creates this really complex delicious caramel sauce - sweet and salty caramel taste, but also a blueberry, peppery, and smoky taste from the wine notes. Check the step by step below to see the magic:

Step 4: As we said, our February flavors of the month are alway a step beyond. Sweet. Sexy. Sublime! We really went all out with our cabernet caramel swirl for our #BrieMine flavor - sourcing our cab from Brooklyn Winery, right in Williamsburg, NY. 
Brooklyn Winery sources grapes from all over the world and makes, barrels, and bottles their wine right in their warehouse in Williamsburg. We visited the winery and our new friend, co-founder of Brooklyn Winery, gave us a tour of the space. After some hard work to decide which wine we’d include in our caramel (hard work = one or two, or three glasses of various wines in their collection), we settle on a fruity Sonoma Cabernet. As you can wee, we went home with batch #107.

Step 4: To make our Brie ‘scream base, it’s actually pretty simple. We basically melt the Brie into the milk and cream base. Add a touch of sugar and incorporate thoroughly.
